Mushroom & Stilton Risotto


  • Arborio rice
  • Stilton
  • Mushrooms
  • Olive oil
  • Vegetable broth
  • Onion
  • Garlic
  • White wine
  • Salt and pepper


  1. Sauté chopped onions and garlic in olive oil until soft.
  2. Add Arborio rice and toast for 2 minutes.
  3. Pour in a splash of white wine and let it absorb.
  4. Gradually add vegetable broth, stirring continuously until rice is creamy.
  5. Stir in mushrooms and cook until tender.
  6. Melt Stilton®.
  7. Season with salt and pepper to taste.
