Mushroom & Stilton Risotto
Ingredients:
- Arborio rice
- Stilton
- Mushrooms
- Olive oil
- Vegetable broth
- Onion
- Garlic
- White wine
- Salt and pepper
Instructions:
- Sauté chopped onions and garlic in olive oil until soft.
- Add Arborio rice and toast for 2 minutes.
- Pour in a splash of white wine and let it absorb.
- Gradually add vegetable broth, stirring continuously until rice is creamy.
- Stir in mushrooms and cook until tender.
- Melt Stilton®.
- Season with salt and pepper to taste.
